Slow Cooker White Bean French Onion Soup


Cook Time 6 hours

Ingredients

  • 2 large white onions diced
  • ½ teaspoon sea salt
  • ¼ cup melted butter
  • 2 14 oz. cans organic white beans
  • 1 teaspoon dried oregano
  • ½ teaspoon freshly cracked black pepper
  • 2 teaspoons fresh thyme leaves
  • 4 cups vegetable stock
  • homemade or storebought croutons for garnish*
  • shredded parmesan cheese for garnish

Preparation

  1. Add the diced onions, salt, and melted butter to your slow cooker on high.
  2. Stir to combine and let the onions caramelize for 3 to 5 hours.
  3. Add the beans, oregano, pepper, thyme, and vegetable stock and continue to cook for another 3 hours on high.
  4. Garnish with homemade croutons and shredded Parmesan cheese.

Recipe Notes

*If you have time, I highly recommend making your own croutons. They are SO much better than store-bought! Below is the recipe I use to make mine.
