Bright Hummus with Lemon

Ingredients

  • 1 ½ cups chickpeas, drained and rinsed
  • cup smooth tahini
  • 2 tbsp extra virgin olive oil
  • 3 tbsp fresh lemon juice, more to taste
  • 1 garlic clove
  • Kosher salt, to taste
  • 5 tbsp water, or as needed to blend
  • Paprika, red pepper flakes, or Italian parsley, for garnish
  • Warm pita bread and/or veggies, for serving

Preparation

  1. In a food processor, place the chickpeas, tahini olive oil, lemon juice, garlic, and salt. Blend until mostly smooth, adding water as needed to blend, and/or to reach your desired consistency. I like to leave little texture to my hummus, but it’s personal preference.
