Easy Marinated Charcuterie

Ingredients

  • Sliced Calabrese salami
  • Sopressata, cut into strips
  • Diced Fontina cheese
  • Diced Gruyère cheese
  • ½ jar baby gherkins, drained
  • ½ jar pitted green olives, drained
  • 1 cup sliced sundried tomatoes (I got the dry kind in the bag)
  • 2 tablespoons parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons champagne vinegar
  • 1 tablespoon lemon juice (approximately ½ lemon)
  • ½ teaspoon red pepper flakes
  • ½ teaspoon Italian seasoning
  • 1 teaspoon sea salt

Preparation

  1. Dice the salami and cheese about the same size. Place in a bowl and add the sun dried tomatoes, pickles, olives and parsley.

  2. Mix the olive oil, lemon juice, vinegar, red pepper flakes, Italian seasoning, and salt. Drizzle over cheese and meat and toss all together. Serve immediately or store in the fridge until ready to serve.

This is completely customizable – you can mix and match with any salamis or cheeses.
