1cupdark chocolate chips, any percentage of cacao will work
4tablespoonscoconut oil
4cupsCool Whip or any pre-packaged whipped topping
1chocolate bar, for garnish
Preparation
1. Add the chocolate chips and coconut oil to a large microwave-safe bowl.
2. Microwave for 30 seconds on high. Remove the bowl from the microwave and if the chocolate chips are melted, mix the melted coconut oil and chocolate chips until they are well incorporated. If the chocolate chips are not melted, then place the bowl back in the microwave and microwave for another few seconds. Repeat until you can easily mix the chocolate and coconut oil together.
3. Then, using the spatula, gently fold the cool whip into the melted chocolate mixture. Keep a light touch so that it keeps the mixture airy, but ensure the ingredients are combined.
4. Divide between bowls. Serve as-is or decorated with additional chocolate chips, shaved or drizzled chocolate. Enjoy at room temperature or chilled.
