I’ve been refining my original avocado toast recipe and wanted to share the latest with you all. Avocado toast is already a classic, but adding roasted cherry tomatoes and fresh herbs takes it up a notch. The mix of creamy avocado, sweet roasted tomatoes, and fragrant herbs bring together a fresh, flavorful plate that’s both simple and satisfying. Whether you’re looking for breakfast or a light lunch — this recipe delivers!

Avocado Toast with Roasted Tomatoes & Fresh Herbs
Ingredients
- ½ cup cherry tomatoes
- 1 teaspoon fresh thyme leaves
- 1 tablespoon extra virgin olive oil
- 2 slices rustic bread (I used French batard)
- 1 ½ large Hass avocado
- 1 tablespoon chopped fresh parsley
- 1 ½ teaspoon lemon juice
- Sea salt, to taste
- Freshly ground black pepper, to taste
- More parsley, thyme, or basil, for garnish
Preparation

1. Preheat the oven to 375 degrees F.

2. Cut the tomatoes in half. Place them on a sheet pan and drizzle with the extra virgin olive oil. Toss the tomatoes and make sure they are coated, then sprinkle sea salt, pepper and thyme over the tomatoes. Roast for 8-10 minutes or until they soften but do not burst.

3. Toast the bread until light brown around the edges.

4. While toasting, make the avocado mash. Halve and pit the avocados, scooping the flesh into a bowl. Add the chopped parsley, lemon juice, and a healthy pinch of sea salt. Mash using using a pestle or fork, leaving some large chunks. Taste and add more sea salt as desired.

5. Spread the avocado mash on each slice of toast. Arrange tomatoes on top of each, and sprinkle with additional herbs of your choosing. Season with more sea salt and freshly ground black pepper, to taste.
