Easy Holiday Appetizers

This time of year I like to share some really easy appetizers for the holidays. You can make these three apps for a gathering of any size! Simple, delicious food at its best.


Blue Cheese–Pecan Spread

RECIPE

  1. Mix ½ cup gorgonzola cheese with 2 tablespoons chopped toasted pecans.
  2. Spread on celery sticks or crackers and drizzle with honey.

Festive Antipasto Skewers

You can make these with any combination of ingredients. I assembled them on these cocktail sticks, which I thought added to the festivity! I made two types of skewers below using the following:

SKEWER 1

  • Marinated Artichoke Hearts
  • Sliced Cucumber
  • Proscuitto or Serano ham – slices were cut in thirds
  • Aged Gouda
  • Pearl Onions
  • Spanish Olives

SKEWER 2A/B

  • Sweet Red or Orange Cherry Peppers
  • Sliced Cucumber
  • Proscuitto or Serano ham – slices were cut in thirds
  • Truffle Cheddar
  • Cornichons
  • Salami
  • Mozzarella Balls – small (different name?)
  • Pickled Onions
  • Sweety Drop Mini Peppers

Note — After assembling, sprinkle salt, and a drizzle of olive oil (optional).


Ina’s Roasted Shrimp

RECIPE

  1. Preheat the oven to 400 degrees F.
  2. Peel and devein about 2 lbs of shrimp, leaving the tails on. Place them on a sheet pan, lightly drizzle with olive oil, add salt and pepper and spread them in one layer. Roast for 8–10 minutes, just until pink and firm and cooked through. Set aside to cool.
  3. For the sauce, combine ½ cup chili sauce, ½ cup ketchup, 3 tbsp prepared horseradish, 2 tsp fresh-squeezed lemon juice, ½ tsp Worcestershire sauce, and a dash of hot sauce. Serve as a dip with the shrimp.
