Summer Salad with Feta, Berries, Smoked Almonds & Chia Seeds

Ingredients
For the dressing
- 2 teaspoons Dijon mustard
- 1 teaspoon honey
- 1 small shallot, minced
- 2 tablespoons red wine vinegar
- ⅓ cup extra virgin olive oil
- ½ teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
For the salad
- 6 ounces green leaf lettuces, about one box
- 8 ounces strawberries halved, or large ones quartered
- 3 ounces organic blueberries
- 4 ounces feta cheese, crumbled
- ⅓ cup smoked almonds, chopped
- Chia seeds, for garnish
Preparation

1. In a small bowl, stir together the mustard, honey, shallot and vinegar. Stir in the olive oil and season with salt and pepper.

2. Put the lettuces in a large bowl. Add the strawberries, blueberries feta and almonds. Drizzle the dressing over the salad, top with chia seeds, toss well and serve.
