Summer Salad with Feta, Berries, Smoked Almonds & Chia Seeds

Ingredients

For the dressing

  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • 1 small shallot, minced
  • 2 tablespoons red wine vinegar
  • cup extra virgin olive oil
  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper

For the salad

  • 6 ounces green leaf lettuces, about one box
  • 8 ounces strawberries halved, or large ones quartered
  • 3 ounces organic blueberries
  • 4 ounces feta cheese, crumbled
  • cup smoked almonds, chopped
  • Chia seeds, for garnish

Preparation

  1. 1. In a small bowl, stir together the mustard, honey, shallot and vinegar. Stir in the olive oil and season with salt and pepper.
  2. 2. Put the lettuces in a large bowl. Add the strawberries, blueberries feta and almonds. Drizzle the dressing over the salad, top with chia seeds, toss well and serve.
