Pimento cheese is a serious staple in the South! There are plenty of good store-bought options available, but it is super easy to make and ready in minutes. I like setting up the pimento cheese with a bunch of stir-ins as a bar. Perfect for a party or—since it’s football season—for a tailgate! The DIY party spread is perfect for ensuring every guest gets exactly what they want.
I’ve listed the stir-ins I used below, but you can also consider these options:
- Sliced dilly beans
- Chopped peppadew peppers
- Chopped pepperoni
- Canned chopped Hatch green chiles
- Chopped dill pickles
- Toasted pine nuts
- Cilantro, parsley, or basil
- Chopped prosciutto

Pimento Cheese Bar with Toppings
Ingredients
For the pimento cheese
- 4 ounces white sharp cheddar cheese, shredded
- 4 ounces yellow sharp cheddar cheese, shredded
- ⅔ cup mayonnaise
- 2 oz jarred diced pimentos drained
- 2 teaspoons Worcestershire sauce
- To taste: garlic salt, Kosher salt, and black pepper (I went big on these!)
- Tortilla chips, crackers, or toast points, for serving
For the stir-ins
- Capers
- Chopped pickled jalapeños
- Chopped green olives
- Toasted chopped pecans
- Chopped fresh chives or green onion
- Chopped crispy bacon
- Sweet pepper jelly
Preparation

1. Stir together the two cheddars, mayonnaise, pimentos, and Worcestershire in a bowl. Season with the salts and pepper.

2. Arrange stir-ins and chips, crackers, and toast points on a tray or several trays. Ready for your gathering!
