I love an easy appetizer that feels more involved than the effort it takes. This Marinated Tomato & Herb Boursin Dip is especially good in the summer when tomatoes are at their best. Classic Boursin cheese is the perfect base for juicy marinated tomatoes, briny capers, and lots of fresh herbs. Everything comes together with just a splash of vinegar and good olive oil, and the result is bright, fresh, and perfect with a crisp cracker. I made this recently and it disappeared fast — always the best sign.

Marinated Tomato & Herb Boursin Dip
Ingredients
- 1 block of Garlic Herb Boursin, more as needed
- 2 cups cherry tomatoes, halved
- 3-4 green onions, sliced
- 3 tablespoons capers
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh parsley, chopped
- 1 ½ tablespoons champagne vinegar
- 2 tablespoons extra virgin olive oil
- 1 teaspoon flaky sea salt
- Crackers, for serving
Preparation

1. Let the Boursin come room temperature. Spread it in a thin layer in a dish or shallow bowl.

2. In another bowl, add the tomatoes, green onions, garlic, capers, sea salt, herbs, champagne vinegar and olive oil. Let this sit about 15 minutes for all the flavors to soak in.

3. Layer the marinated tomatoes over the Boursin and serve with crisp crackers or pita chips.
Recipe Notes
My plate was about 11″ wide. If you go larger, you may need more than one block of Boursin.
