There is something so “summer” about this salad! The star of the show is celery, with red onion, garlic, capers, and a simple dressing of olive oil and red wine vinegar, fresh oregano and parsley. I honestly did not know I liked celery this much, but I love this salad! It is unexpected but so delicious, and comes together in just minutes.

Crunchy Celery Salad
Ingredients
- 2 bunches of celery, about 12-14 stalks (I removed the whiter middle stalks)
- ½ medium red onion, very thinly sliced
- 2 garlic cloves, minced
- ½ cup red wine vinegar
- ⅓ cup extra virgin olive oil
- 2 ½ tablespoons capers
- 3 tablespoons fresh oregano, chopped
- 3 tablespoons fresh parsley, chopped
- 1 teaspoon Kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes
Preparation

1. Remove the celery leaves and cut the stalks on the bias into ¼” slices. Transfer to a large bowl.

2. Add the onion, garlic, vinegar, oil, capers, oregano, parsley, salt, black pepper, and red pepper flakes. Toss to combine. Taste and adjust the seasonings as needed.

3. Cover and marinate in the refrigerator for at least an hour to let the flavors meld. Toss again and serve!
