Dark Chocolate Snickers Date Bark

A healthier, homemade twist on a Snickers bar that makes a great gift!


This Snickers date bark recipe features medjool dates layered with creamy peanut butter, rich chocolate, and crunchy peanuts. It’s a healthier, homemade twist on a Snickers bar and makes the perfect vegan, gluten-free treat to keep in your freezer for anytime cravings. It also makes a great gift!

Dark Chocolate Snickers Date Bark

Ingredients

  • 24 pitted medjool dates
  • Peanut butter or almond butter, about a half jar
  • ¾ cup crushed peanuts
  • 14 oz. chocolate – I used 70% pure dark chocolate melts
  • Flaky sea salt

Preparation

  1. 1. Start with a baking sheet lined with parchment. Split the medjool dates open and press down each one down onto the sheet, making sure they overlap a little so they stick together.
  2. 2. Wet the bottom of a large drinking glass; use it to mash the dates down into a flat layer.
  3. 3. Drizzle your nut butter over the top. This step is a lot easier with peanut butter or almond butter that has a runnier consistency. In order to make this easier to spread, I placed the jar in a large bowl and left it under hot running water for a few minutes.
  4. 4. You can either leave the nuts whole or chop them — I decided to go the latter route. If you prefer chopped nuts, you can place them in a Ziploc bag and carefully smash them with a rolling pin or other tool.
  5. 5. Chop and melt the chocolate. Either place it in a microwave-safe bowl and microwave for about 45 seconds, stirring halfway through.
  6. 6. Pour the melted chocolate evenly over the nuts. I used a very small spatula to evenly spread it, almost like I was frosting a cake. Then, finish with a sprinkle of flaky sea salt.
  7. 7. Slide the baking sheet into the fridge and leave it for at least one hour. After the chocolate has hardened and the ingredients have set together, break the bark into smaller pieces. The bark will stay fresh in an airtight container for several days.

Recipe Notes

Go for fresh Medjool dates that are soft and plump. Older dates tend to be drier and won’t provide the desired chewy texture. They need to be juicy and pliable to squish down into a smooth base layer.
