Tzatziki Chickpea Salad with Greek Yogurt

A bright chickpea salad with cucumber, herbs, and a lemony tzatziki dressing.

This simple Tzatziki Chickpea Salad is made for warm-weather lunches and easy dinners. Crisp cucumbers, hearty chickpeas, and fresh herbs are tossed in a lemony Greek yogurt dressing with just enough garlic and honey to balance the tang. This is healthy, completely protein-packed, and requires no cooking. And, it is satisfying enough to stand on its own, though it pairs well alongside grilled meats, vegetables, or falafel.

Ingredients

  • 1 ½ cups Greek yogurt
  • 1 large garlic clove, grated
  • 4 tablespoons extra virgin olive oil, plus more for serving
  • 4 teaspoons honey
  • 1 lemon, zested and halved (or more, if desired, for seasoning)
  • 2 English cucumbers, halved lengthwise and cut into ¼-inch pieces
  • 2 15-ounce cans chickpeas, drained
  • Large handful dill, chopped
  • Large handful mint leaves, chopped
  • 3 scallions, thinly sliced
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Preparation

  1. In a large bowl, add the yogurt, garlic, olive oil, honey and the juice of half lemon and whisk to combine. Season well with salt and pepper.
  2. Add the cucumbers, chickpeas, dill, mint and scallions, and squeeze the remaining half lemon over the mixture. Toss until everything is evenly coated in the dressing and the coverage is to your liking. Taste and season well with salt and pepper.

  3. To serve, drizzle with additional olive oil and add the lemon zest on top. Serve chilled.
